garlic cream cheese mashed potatoes

i had these at revolution brewing for the first time and had to find/create a recipe for them. SO delicious.

garlic cream cheese mashed potatoes

adapted from the examiner and

prep time: 35-40 min | actual time: 1 hr |serves: 5-6

what you need:

  • 5-6 lg yellow potatoes (these are a bit buttery and creamy themselves, but any potato is fine)
  • 3-4 cloves garlic, crushed
  • 8 oz (1 pkg) Philly cream cheese
  • 1/2 stick unsalted butter
  • 1 cup milk
  • 3 tablespoons Parmesan cheese
  • salt and pepper

get it done:

  • peel skins off and cut the potatoes in half or in quarters, depending on size
  • boil potatoes in salt and water in a pot
  • once it boils, cover partially and simmer until potatoes are tender (ab 30-40 minutes depending on size)
  • my wonderful roommate has a mixer so i used this – but you can also use a masher if you have one too!
  • combine potatoes, cream cheese, butter, garlic, and milk and mix
  • season with salt and pepper to taste
  • return back to pot and place over medium heat, adding more milk if needed – stirring constantly until heated
