roasted parmesan potatoes

a delightful, easy side dish!

roasted parmesan potatoes

prep time: 10 min | total time: 30 min | serves: 4-5

what you need:

  • 1 tbsp olive oil
  • 4-5 yellow potatoes
  • 2 cloves garlic, minced
  • 1/4 cup parmesan, freshly grated
  • salt, pepper, parsley
  • bacon too, if desired

get it done:

  • preheat oven to 400F
  • cut potatoes into chunks (about 1 in) and place in a bowl. toss with olive oil, salt, pepper
  • scatter over baking sheet and evenly space
  • if you’re doing bacon – place it on a a lower rack and bake – remove it when it’s cooked to your liking
  • let the potatoes bake for about 20 min, add garlic, toss them around and let them bake for another 5-10 minutes
  • grate parmesan over the potatoes and scatter parsley and bacon on top!
