goat cheese and tomato pasta bake

apologies for not having the DSLR photos, but don’t worry – i’ll be making this again for sure.

quick and hearty meal, and pretty healthy too!

goat cheese and tomato pasta bake

prep time: 30 min | total time: 1 hour | serves: 5-6

what you need:

  • 1/2 lb whole wheat pasta
  • 2 large garlic cloves, minced
  • 28 oz canned diced tomatoes
  • sugar, salt, pepper, olive oil
  • 1/4 cup basil leaves, whole
  • 4 oz soft goat cheese
  • 1/2 cup parmesan cheese
  • 11 oz greens (i like spinach)
  • 1/2 cup breadcrumbs
  • note: if you want to make this a meat dish, chicken works well. just cook some chicken and shred and toss in the mix

get it done:

  • boil a large pot of salted water for the pasta
  • preheat oven to 350F
  • cook the pasta for about 2 minutes less than the package instructions, it will cook more in the oven
  • in the last few minutes of it cooking, add in your greens
  • drain and transfer to a large bowl and add the tomato-cheese sauce and any protein you have for this, and combine thoroughly
  • transfer to a baking dish and cover in breadcrumbs
  • bake until lightly brown, ab 30 min and let it stand before serving

for the tomato sauce:

  • heat olive oil over medium heat and stir in garlic
  • add tomatoes, sugar, salt, and basil and stir – turn up and bring to a boil
  • lower back to simmer for 15-20 minutes or until thickened
  • add pepper and anything else to taste
  • stir in goat cheese and parmesan and adjust seasonings again
