fried rice

i love fried rice, and for a meal in less than 30 minutes, it’s always nice to throw this into the mix. especially when it’s rainy and cold. i love to sauté some bok choy with oyster sauce and garlic as a side.

quick and easy comfort food! make it healthier with brown rice or quinoa if you wish. fill with whatever veggies or proteins you desire 🙂

prep time: 20 min | serves: 3-4

what you need:

  • 2 cups cooked long grain white rice – either leftovers or refrigerated so it’s dried out a bit
  • butter, salt, pepper
  • 1 clove of garlic, minced
  • 1/2 medium onion, chopped
  • 1/4 cup frozen peas, defrosted
  • 1 egg
  • 1 chicken breast, cubed, or leftover meat (sometimes i use ground pork)
  • 1 cup shrimp, defrosted
  • 1 tbsp oyster sauce
  • 1 tbsp fish sauce
make it happen:
  • heat a large wok or skillet
  • add oil or butter to coat the pan for about 30 secs
  • reduce heat to low, add garlic and onions and stir for another 30 seconds
  • turn heat up to med-high, add some additional butter and add meat, stirring until almost cooked through, a few minutes depending on size of cubes
  • add peas and other vegetables
  • crack an egg and scramble until almost cooked through, a minute or so
  • add salt, pepper, sauces
  • add rice and stir until even and heated throughout, a few minutes here
  • taste and adjust seasoning as necessary
  • serve hot and top with green onions and soy sauce
