miso-glazed salmon

i don’t know about you but i definitely need something light this time of year. fish and veggies? yes please!

you can whip this up so easily, throw it in the oven, and voila! a quick and gourmet meal 🙂

miso-glazed salmon
adapted from bon appetit
time: 20 min | serves: 3-4

what you need:

  • 4 salmon fillets
  • 1/3 cup  miso
  • 2 tbsp rice vinegar
  • 2 tsp minced ginger (peeled)
  • dash of soy sauce
  • salt, pepper

get it done:

  • line a baking sheet with foil and spray with cooking spray or olive oil
  • place salmon the sheet evenly apart
  • whisk miso, vinegar, ginger, and soy sauce together in a bowl
  • spread mixture over salmon with salt on each side
  • marinate for 15-20 minutes
  • broil salmon, turning once if thick, 12 or so minutes (depending on size) until opaque
  • serve with your favorite veggies
